Black Bean Chili

So Good You Won't Believe its Meat Free


Produces 6 servings


3 Cups                 Cooked or canned Black Beans

8                            Tomatoes

1/2                        Red Onion

6 cloves               Garlic

8oz                        Baby Bella Mushrooms

2                            stalks of celery

1                            Carrot

1 cup                    Vegetable Stalk

1 tbsp                  Olive Oil

1 tbsp                  Chili Powder

1/4 tsp                Red Chili Pepper

To taste               Salt 

Sharp Cheddar Cheese as a Topping



  1. Peel and chop the tomatoes and place them in a medium sized pot.

  2. Place the tomatoes on a medium heat for 30 minutes, stirring occasionally until the tomatoes liquify.

  3. While the tomatoes are cooking, chop your garlic, onions, mushrooms, celery and carrots. 

  4. Drizzle a 5qt pot with olive oil and saute your chopped vegetables on a medium heat, add salt to taste, for about 5-6 minutes.

  5. Combine the cooked tomatoes, black beans, vegetable stock, and chopped vegetables and spices in the 5qt pot. Stir to ensure that all the ingredients are well combined. Cook for another ten minutes.

  6. Serve hot and top with cheese.

  7. Enjoy!
