
Tomato Leek Soup
Hearty Homemade Soup
Produces 8 cups
10 Tomatoes
4 cups Homemade Chicken or Turkey Stock
1 Medium Leek
6-8 cloves Garlic
1 Small Onion
1/4 cup Parsley
2 tbsp Olive Oil
To taste Salt and Pepper
Directions:

Peel and chop the tomatoes into half inch cubes.

Chop your other vegetables. Garlic should be finely chopped. The leek, onion and parsley can be chopped to your preferences ( if you enjoy a chunkier soup chop larger pieces)

In a large pot heat the olive oil over a medium heat.

Add the onions and leek and sautee over a medium-low heat for about 5 minutes, stirring occassionally until the onions and leek become tender.

Add the garlic, and let brown for 2 minutes

Add your tomatoes, salt and pepper and cook on a medium heat for 15 minutes, stirring occassionally as the tomato softens and liquifies.

Add your stock to create the consistency of soup that you enjoy (or to stretch the recipe to serve more people.) I usually use about 4 cups of stock.

Allow your soup to simmer for antoher 15 minutes.

Add parsley and let simmer for 5 more minutes.

Serve your soup hot and garnish with fresh parsley.
