
Maple Pecan Spelt Cookies
Soft, Naturally Sweetened Indulgence
Produces a dozen cookies
1 3/4 cups Spelt Flour
1/2 cup Maple Syrup
1/2 cup Ground Pecans
1/4 cup Pecan Halves (or Whole Pecan for Garnishing)
1/2 cup Applesauce
1 Egg
1 tsp Vanilla Extract
1/2 tsp Salt
1 tsp Cinnamon
2 tbsps Unrefined Coconut Oil
1 tbsp Almond Milk or Coconut Milk
1 tsp Baking Powder
Directions:

Preheat the oven to 350 F

In a food processor (or coffee grinder) grind a 1/2 cup of pecan.

Mix ground pecans and all dry ingredients in a large bowl.

Mix all wet ingredients in a separate bowl

Combine dry and wet ingredients together and mix thoroughly. The batter should be thick and sticky.

Scoop the batter onto a baking sheet lined with parchment paper.

Push the cookies down flat with the back of a large spoon.

Press the pecan halves into the top of the cookie in a flower pattern.

Place the cookies in the oven for 15 minutes.

Remove them from the oven. Let them cool and then serve.
