Gluten-Free Dairy-Free Banana Bread 

Allergy Proof Recipe 


Produces about 15 servings


1/2 cup               Coconut Oil
3/4 cup               Organic Brown Sugar or Coconut Sugar
1 1/2 cups          All Purpose Gluten Free Flour
1 tsp                     Baking powder
1 tsp                     Sea Salt 
1/2 tsp                Cinnamon (optional)
4                            Small Overripe Bananas 
1 tsp                     Vanilla Extract (optional)




  1. Preheat oven to 325° F. Lightly grease 5, 8oz mason jars or a medium sized loaf pan.

  2. Cream the coconut oil and sugar in large bowl.

  3. Slowly sift in flour, baking powder, sea salt, and cinnamon.

  4. Mash bananas in separate bowl and then add in to large bowl and mix. Add vanilla extract.

  5. Pour the batter into the greased mason jars or loaf pan. Fill your mason jar only about 3/4 of the way full (because the batter will rise.)  

  6. Bake for 60 minutes or until knife comes out clean.

  7. Let the bread cool. Slide it out of the masson jars and slice into 1/2" slices.

  8. Enjoy!
