
Cauliflower Pizza Crust
Gluten-Free and Grain-Free
Produces 4 servings
1 Head of Cauliflower
1 Egg
1/2 cup Soft Goat Cheese
1/2 tsp Oregano
1/2 tsp Garlic Powder
1/2 cup Marinara Sauce
1 cup Shredded Cheddar Cheese
1/4 tsp Salt
Directions:

Pre heat your oven to 400 F

Wash your cauliflower and pulse it in a food processor until you get a rice like texture. You will want to have about 4 cups of riced cauliflower.

Place all of the riced cauliflower onto a clean dishtowel. Pull up the sides of the towel and create a little sac for the cauliflower. Squeeze the little sac that you have made out of the towel and try to squeeze out as much water as you can from the cauliflower. The more water you squeeze out the better your pizza crust will stay together, so try to squeeze out as much water as you can.

In a large bowl combine the cauliflower, one beaten egg, goat cheese, oregano, garlic powder and salt.

Place your mixture on a baking sheet lined with parchment paper.

Use your hands to form the dough into a rectangle with raised edges.

Put your crust in the oven for 30 minutes or until the crust starts to turn golden brown.

Top you pizza crust with whatever you like. I enjoy marinara sauce, mushrooms, slices of baked chicken, red onions, spinach and cheddar cheese.

Once you have put the toppings on the pizza put it back into the oven for about ten minutes, or until the topping are cooked and the cheese has melted.
